BROWNIE-COOKIES



INGREDIENTS 

  • 1¾ cups all-purpose flour 
  • ½ cup cocoa powder 
  • 1 teaspoon baking soda 
  • 1 teaspoon cornstarch 
  • ½ teaspoon salt 
  • ½ cup unsalted butter, room temperature 
  • ½ cup unsalted butter, melted and cooled 
  • 1¼ cups sugar 
  • 2 eggs, room temperature 
  • 2 teaspoons vanilla 
  • 1 teaspoon chocolate extract (optional) 
  • 3 tablespoons strong coffee 
  • 9 oz melted chocolate 
  • 1½ cup mini chocolate chips 
  • 10 chocolate chip cookies 
  • 12 Oreos 


INSTRUCTIONS 

1. Mix together the flour, cocoa powder, baking soda, cornstarch, and salt. Set aside. Line two baking sheets with parchment paper and preheat the oven to 350 degrees F. 

2. Beat both butters and sugar together until light and fluffy. Add the eggs one at a time, beating well between each addition. Add in the vanilla extract and the chocolate extract if using. Mix in the coffee and melted chocolate and mix well. 

3. Fold in the flour mixture and the chocolate chips. Quarter the chocolate chip cookies and Oreos and fold them into the dough. 

4. Place heaping tablespoons of the dough onto the baking sheets and bake for 8 - 9 minutes. Allow to cool for a few seconds and then transfer to a wire rack to cool completely.
